Quick primal breakfast – poached eggs, bacon, avocado, spinach

I had a lot of meaty snacks and frittatas prepared, but I just felt like bacon this morning – a nice simple, clean breakfast. But I also wanted some greens and fats, as I’ve adjusted my carb intake and have been feeling a little low-carb fluey over the past couple of days.

Enter poached eggs, bacon, and half an avocado on a bed of baby spinach leaves, a smattering of Parmesan, and a drizzle of olive oil and balsamic. Salt and pepper and a dash of hot sauce (Tabasco is my favourite!) and breakfast is served!
