Love stirfries but don’t want to eat all that rice, but at the same time finding it hard to say goodbye? I’m like that with Green Chicken Curry. I love it. I even had a special cooking lesson in Thailand specifically to teach me how to make it (along with Green Papaya Salad – another primally awesome recipe!).
So, I tried eating it without rice and it was more like soup. I tried it with steamed cauliflower underneath it and, well, it tasted like I had just put steamed cauliflower underneath curry soup. AND THEN:
CAULI RICE:
Take half a cauliflower and chop it into manageable chunks.
Throw it into a blender/food processor (in batches depending on your machine’s horsepower) and blend until it looks like rice.
Throw it into a hot pan with the cooking oil of your choice (Thai food and coconut oil is a no-brainer!)
Stirfy until it looks as delicious as mine.
Serve under the stirfry/curry of your choice!
AND in a couple of days I can tell you whether it keeps well in the fridge π
Now for the stats: If you are paleo/primal/watching your carbs, cauliflower is preferable to rice:
Cup for cup faceoff: Cauli and Rice
Cauli has around 30 calories in a cup, 5g carbs and 2g fibre
Rice (white) has around 200 calories in a cup, 40-50g carbs and 0g fibre! (erm – my stats are rough but you get the idea!)
Try it and tell me it’s not better than rice! Tell me! You can’t.

I never would have thought of making this. I’m going to try cauli “mashed potato” tonight. So much better than regular mashed potato!

That stuff really is better than mashed potatoes – more flavor, mildly sweet… My routine usually includes some green onion, salt, pepper, and (not paleo strict) a bit of cream cheese and some cream. They could serve it in fancy restaurants as a “Savory cauliflower puree” beside a steak and people would go nuts over it.
I mash caulies, add butter, some cheese, and get most awesome mashed notato π
That would be great for on top of some primal shepherd’s pie, I reckon! Cheers!
